Foccacia with La Vie™ vegan lardons

150 g La Vie™ smoked lardons
250 g strong white bread flour
12 g fresh yeast
150 ml warm water
1 tsp salt
A few cherry tomatoes
A sprig of dried rosemary
Olive oil
Step 1:
Gently sprinkle and mix the yeast into the warm water.
In a separate mixing bowl, combine the flour and salt.
Step 2:
Gradually add the yeast and water mixture into the flour and knead for around 10 minutes until you have a nice, smooth dough (ideally with a food mixer on speed setting 1 if you have one).
Step 3:
Oil the inside of a large bowl and put the ball of dough inside. Cover with a damp tea towel and leave the dough to rise for around two hours in a warm room, or on top of a radiator.
Step 4:
Once the dough has risen, roll it out with a rolling pin to get rid of any air. Place the rolled-out dough onto an oven tray.
Step 5:
Fry off the La VieTM lardons in a hot pan with a little oil, until they start to brown. They shouldn't be completely crisped, or else they may burn in the oven.
Step 6:
Preheat your oven to 180 °C. Once the oven is hot, use your fingers to make holes in the foccacia (super satisfying). Drizzle over 3 generous tablespoons of olive oil. Add a few cherry tomatoes into the holes and sprinkle with lardons.
Pop in the oven for 20 minutes.
Step 7:
Once the foccacia has turned a gorgeous golden brown, take it out of the oven and leave to rest for a few minutes.
Then, tuck in! Bon appétit!
