Vegan tacos with La Vie™ lardons

For the tacos:
12 corn or wheat tacos
200 g La Vie™ smoked lardons
2 avocados
200 g plant-based creme fraîche
200 g grated vegan cheese
2 limes
A few sprigs of fresh coriander

For the salsa:
4 tomatoes
75 g La Vie™ classic lardons
1 small red pepper
1 small green pepper
1 red onion
3 cloves of garlic
2 tsp Mexican spice blend (here's our secret blend - ½ tsp cumin, ½ tsp ground coriander, ½ tsp smoked paprika, ½ tsp pepper)
1 tsp tomato purée
1 tsp sugar

Step 1:
Dice up the tomatoes and peppers. Chop the onion and garlic cloves (or crush it to avoid garlicky fingers for the next 3-5 business days).

Step 2:
Fry the La Vie™ classic lardons in a hot pan with a dash of oil. Once they've got a gorgeous colour on them, add the onion and garlic.
After a few minutes, add the spices and sugar. Mix together then add the tomatoes, peppers, tomato purée, half a glass of water (around 125 ml if you're a scientist-style foodie) and a pinch of salt. Cover and leave to cook for 5 minutes.

Step 3:
Uncover the pan and let the liquids reduce until the salsa thickens up. Leave to cool.

Step 4:
Add a thin layer of grated cheese over the tacos and quickly pop them under the grill to let the cheese melt a little.

Step 5:
Fry your La Vie™ smoked lardons in a hot pan with a dash of oil. Leave them to cook for 5-6 minutes until they've got a glorious colour on them.

Step 6:
Stone and slice the avocados.
Take the tacos and add a little salsa, a few slices of avocado, a small spoonful of crème fraîche and a big spoonful of La VieTM lardons.
Finish with flair by squeezing over a little lime juice and sprinkle with a few coriander leaves (Salt Bae style optional).
