Charles’ Vegan Poke Bowl

12 slices of La Vie™ bacon
1 carrot
½ cucumber
50 g sweetcorn
50 g red cabbage
1 tsp rice vinegar
1 tsp sugar
4 tsp Japanese sesame dressing
A few toasted sesame seeds
For the dressed rice:
150 g long-grain rice
4 tsp rice vinegar
2 tsp sugar
½ tsp salt
Step 1:
Rinse the rice in clean water several times until the draining water runs clear.
Then, cook using the absorption method, following the cooking instructions on the packet, then leave to cool to room temperature.
Step 2:
Mix the rice vinegar with the salt and sugar. Slightly heat, so all elements are properly dissolved.
Gently mix through the warm rice.
Step 3:
Grate the carrot and add the teaspoon of vinegar and the teaspoon of sugar.
Grate the cabbage, slice the cucumber and the radish into rounds.
In a hot pan, fry the bacon slices until they're nice and crispy. Set aside.
Step 4:
Add the rice into the bottom of the bowl and sprinkle over a pinch of sesame seeds. Get creative with your presentation, adding the vegetables over the top, crowning it with the star of the show - the crispy bacon.
